Oreganos fall under the "Mediterranean" category that is, herbs that generally love the sun, heat, and a well drained soil. The flavor is diminished by overfertilizing. We suggest an organic, balanced (like a 3-3-3 to 10-10-10 max.) fertilizer at planting with annual dressings. We carry mostly hardy oregano and Marjoram, a sweet annual oregano. Sage & Quick White Beans (Fagioli all ‘Uccelletto)
serves 4-6
olive oil
5 sage leaves, or more 28 ou. of canned white cannellini beans
2-3 garlic cloves 14 ou. tomatoes, peeled and roughly chopped
fresh ground pepper salt to taste
Heat several tablespoons of good olive oil in a heavy pan over medium heat. Brown the sage, garlic and fresh ground pepper. Add the beans, stirring for a few minutes to allow the flavors to blend. Add the tomatos, salt to taste and continue cooking, covered for about 15 minutes.
MEAT VERSION:
Brown 2 spicy sausages per person in a heavy pan and use the pan juices to brown the sage, garlic & pepper. Continue recipe, as above and add 4 T. red wine.

SAGE - SALVIAS
All Sages/Salvia were "Herb of the Year," promoting it as the youth herb as it's been used to darken hair, improve memory, even ease wrinkles. Wishful thinking? Not entirely. We use it in the bath to soothe muscles, drink the tea to ease nerves and indigestion and you'd be WISE to add the silver and white varieties to your white garden. Sage is the common name for salvias, a plant group boasting 600+ varieties. Very generally speaking, sages love the sun, heat, and dry draining slopes, but check out each introduction for differences in hardiness & cultural needs. My favorite quality, however, is the variety of color and leaf shapes which is always welcome in otherwise subtle herb greenery.
