serves 4-6 T.
- olive oil
- 5 sage leaves, or more
- 28 ou. of canned white cannellini beans
- 2-3 garlic cloves
- 14 ou. tomatoes, peeled and roughly chopped
- fresh ground pepper salt to taste
Heat several tablespoons of good olive oil in a heavy pan over medium heat. Brown the sage, garlic and fresh ground pepper. Add the beans, stirring for a few minutes to allow the flavors to blend. Add the tomatoes, salt to taste and continue cooking, covered for about 15 minutes.
MEAT VERSION: Brown 2 spicy sausages per person in a heavy pan and use the pan juices to brown the sage, garlic & pepper. Continue recipe, as above and add 4 T. red wine.
