... are where most of us began our love affair with herbs. Planted close to your kitchen, no dish from breakfast to midnight snack is safe from the embellishment of herbs. Use fresh if possible and cook minimally.

The fullest flavors are



Feta Mushroom Pita Focaccia


Serves 4-6
2 tsp. fresh rosemary
1/3 c. feta, coarsely crumbled
2 T. olive oil
2/3 c. mushrooms, chopped
4 pitas
1 T. fresh oregano
Preheat oven to 350. Crush the rosemary in the oil. Place the pitas on a baking sheet, brush them liberally with the rosemary oil and them top with the cheese, mushrooms and oregano. Bake about 8 minutes or until the cheese melts.





Garlic - Soap Spray


Common Uses:Repellant
  • 4-6 large Garlic Cloves
  • 1 Tbsp. Vinegar (lowers water pH to make garlic more effective)
  • 1 Quart Water

Pulverize in food processor





Japanese Beetle Control


Japanese Beetle are migratory. Whatever is done should also be done with neighbors as a community.

1. Milky Spore: A bacterial powder applied to lawn in early spring. Kills overwintering grubs for 10 years. Expensive, but not as expensive as "Dursban TM" over the 10 years.

2. Neem Oil Products: Japanese Beetle will sooner starve to death than eat sprayed leaves. Must be reapplied after rains, and is not cheap.

3. Traps: Very effective. Must be done as neighborhood, otherwise you are simply attracting your neighbors beetles into your own yard.





Laid back & Lustful Patchouli Potpourri


Feeling romantic or just need to slow down? Collect handfuls of ANY of the following dried herbs:
patchouli leaf
ginger root
lavender leaf or buds
rose petals
chamomile flowers
You might want to add cinnamon chips or whole cloves and 4-5 drops of sandalwood, rose, or cassia essential oil. Place in a dark spot and cover when not in "use," if that's practical.





Lavender Vinegar


Blend 1 1/2c. white wine vinegar and 1 tsp. dried or 2 tsp. fresh lavender in a glass jar with a plastic lid and shake well. Set aside overnight. Next day, strain vinegar and discard lavender.





Liebestrauben Glazed Carrots


Serves 2
1 t. butter
1 T. brown sugar
1/3 c. semi-dry white wine
1/3 c. water
1 c. fresh carrots, julienned
Melt butter in a saucepan. Add brown sugar, wine, water and carrots. Bring to a boil. Cover and simmer for about 15 minutes. Remove cover and continue cooking until carrots are tender, but still crisp, and most of the liquid has boiled off leaving only a butter glaze.
Wine Suggestion: Liebestrauben from Warner Vineyards (MI).

Organic Solutions: Homemade Soap


Common Uses:Soap Making
Homemade soap? Cover freshly harvested Soapwort leaves with rain water. Bring to a boil. Strain off leaves and use as a hair or face wash for eczema, acne or just plain fun. Doubles as a fabric wash to restore colors.





PEAR & FETA SALAD


about 4 servings.
dressing: salad:
1/2 c. olive oil 4 firm, ripe pears, thin sliced
3 T. lavender vinegar 2 T. lemon juice
1/4 tsp. salt & pepper 1/2 c. feta (or 1 c. swiss)
1/4 tsp. dry mustard 1/2 c. pecans, chopped
GREENS, violets, lettuce
Combine all dressing ingredients in a glass jar with a tight fitting lid and shake well. In medium bowl, carefully toss pears with lemon juice. Add the cheese and pecans. Pour dressing over pears. Toss gently. Serve pears over greens and garnish with edible flowers.





Roasted Garlic


New in 2006
Cut off the stem of a garlic head. Drizzle butter & sprinkle salt, pepper & thyme. Wrap head in foil. Bake at 300 for an hour. Cool. Squeeze the "spread" out of each clove and smother on bread or steamed veggies; add to salsa and hot pizza.
Warning: roasted garlic is so sweet, mellow and delicious that you may be tempted, like Mark, to eat a bulb or two. His limit is 3 bulbs (I said bulbs not cloves). While there are an abundance of health benefits linked to garlic, one of them being diuretic, eating that quantity may lead to excessive magazine reading... on the throne the following day!





Sage & Quick White Beans (Fagioli all ‘Uccelletto)


serves 4-6 T.
olive oil
5 sage leaves, or more
28 ou. of canned white cannellini beans
2-3 garlic cloves
14 ou. tomatoes, peeled and roughly chopped
fresh ground pepper salt to taste
Heat several tablespoons of good olive oil in a heavy pan over medium heat. Brown the sage, garlic and fresh ground pepper. Add the beans, stirring for a few minutes to allow the flavors to blend. Add the tomatoes, salt to taste and continue cooking, covered for about 15 minutes.
MEAT VERSION:
Brown 2 spicy sausages per person in a heavy pan and use the pan juices to brown the sage, garlic & pepper. Continue recipe, as above and add 4 T. red wine.





Savory Better Butter


Greek Pita Feast In March of 2004, Mary Jane Lalonde and I collaborated on a day long "Comfort Workshop" with a class on using herbs in soap, infused oils and tea. I demonstrated and shared the story of the Native Peoples' Medicine Wheel Garden. Keeping in that spirit, we prepared a nourishing, comfort food luncheon. This recipe is from the luncheon.
1/3 butter, 1/3 olive oil, 1/3 nonfat yogurt, minced garlic and herbs
Tastes great and spreads easily right out of the refrigerator.
