    In March of 2004, Mary Jane Lalonde and I collaborated on a day long "Comfort Workshop" with a class on using herbs in soap, infused oils and tea. I demonstrated and shared the story of the Native Peoples' Medicine Wheel Garden. Keeping in that spirit, we prepared a nourishing, comfort food luncheon. This recipe is from the luncheon.
  • 2 Quarts plus 8 bags cinnamon herbal tea
  • 1 apple, sliced
  • 12 ou. frozen cranapple juice concentrate
  • 3- 6" cinnamon sticks

    Add tea bags to 1 quart boiling water, cover and allow to steep 5 minutes. Remove tea bags from water, add cranapple juice concentrate. Fill apple juice can 3 times with cold water and pour into tea mixture. Garnish with apple slices and cinnamon sticks.

  • 2 tsp. fresh rosemary
  • 1/3 c. feta, coarsely crumbled
  • 2 T. olive oil
  • 2/3 c. mushrooms, chopped

  • 1 T. fresh oregano

    Preheat oven to 350. Crush the rosemary in the oil. Place the pitas on a baking sheet, brush them liberally with the rosemary oil and them top with the cheese, mushrooms and oregano. Bake about 8 minutes or until the cheese melts.

  • Fresh Elderberry Pie

  • 1 c. sugar
  • 4 c. fresh elderberries
  • 3-4 T. flour
  • 1 T. lemon juice
  • 1 tsp. cinnamon
  • 2 T. butter
  • 1/8th tsp. salt

    Prepare 2 crusts for a 9” pie dish and line the pan with 1 of them. Combine sugar, flour, cinnamon and salt. Spoon half this mixture over the pastry crust. Add fruit and sprinkle with remaining sugar mixture. Drizzle the lemon juice evenly over fruit and add thin slices of butter here and there. Lay the second crust over & SEAL the edges. Prick “vents” with fork and bake in a preheated 425 degree oven for 30-40 minutes on the lower shelf.

    1 T. flour
    1 T. Parmesan cheese

    Grainy Apricot Mustard


    1/4 c. yellow or brown mustard powder
    1 T. peach balsamic vin.
    2 T. each: yellow & brown seeds, coarsely ground
    1/4 c. apricot preserves
    3 T. each: white wine & white wine vinegar
    1 tsp. salt

    Make a paste with mustard and water first, wait 10 minutes and then blend together the remaining ingredients, following basic procedure.

    Basic Procedure:
    Blend the mustard and 1/4 c. water to a paste. Let stand 10-15 minutes.
    Stir in remaining ingredients. If necessary, thin with a little more water or wine, guided by what’s already in the recipe. Heat, if desired. Pack in CLEAN jars. Allow to mellow at least 24 hours before trying.

  • Japanese Beetle Control


    Japanese Beetle are migratory. Whatever is done should also be done with neighbors as a community.

    1. Milky Spore: A bacterial powder applied to lawn in early spring. Kills overwintering grubs for 10 years. Expensive, but not as expensive as “Dursban TM” over the 10 years.

    2. Neem Oil Products: Japanese Beetle will sooner starve to death than eat sprayed leaves. Must be reapplied after rains, and is not cheap.

    3. Traps: Very effective. Must be done as neighborhood, otherwise you are simply attracting your neighbors beetles into your own yard.

    Laid back & Lustful Patchouli Potpourri


    Feeling romantic or just need to slow down? Collect handfuls of ANY of the following dried herbs:
  • patchouli leaf
  • ginger root
  • lavender leaf or buds
  • rose petals
  • chamomile flowers
    You might want to add cinnamon chips or whole cloves and 4-5 drops of sandalwood, rose, or cassia essential oil. Place in a dark spot and cover when not in "use," if that's practical.

  • Lavender Vinegar


    Blend 1 1/2c. white wine vinegar and 1 tsp. dried or 2 tsp. fresh lavender in a glass jar with a plastic lid and shake well. Set aside overnight. Next day, strain vinegar and discard lavender.

    Liebestrauben Glazed Carrots


    Serves 2
  • 1 t. butter
  • 1 T. brown sugar
  • 1/3 c. semi-dry white wine
  • 1/3 c. water
  • 1 c. fresh carrots, julienned

    Melt butter in a saucepan. Add brown sugar, wine, water and carrots. Bring to a boil. Cover and simmer for about 15 minutes. Remove cover and continue cooking until carrots are tender, but still crisp, and most of the liquid has boiled off leaving only a butter glaze.

    Wine Suggestion: Liebestrauben from Warner Vineyards (MI).

  • Lime & Ginger Salmon


    Here’s my favorite and quickest way to prepare salmon

  • 1 lime
  • 1 tsp. grated fresh ginger root
  • 1/4 c. honey
  • 1-1/2 # salmon
  • 2 T. olive oil
  • 2 c. each spinach & watercress
  • 2 tsp. soy sauce

    Finely shred the peel of 1 lime. Set aside. Combine juice of 1 lime, honey, oil, soy sauce, ginger root and 1 tsp. lime peel. Set aside 2 T. marinade for splashing on after cooking. Marinate the salmon fillets in the above lime liquid for up to 2 hours, turning occasionally. Grill as desired or broil. (My toaster oven broils it perfectly after about 30 minutes). Do not over cook. Once it flakes, it’s done because it continues to cook even off the heat. Serve over greens and drizzle with reserved lime mixture.
