Along with coriander, nettle, horehound and lettuce, this is one of the 5 bitter herbs of Passover. Dig and wash roots in the fall as frost kills leaves. Use potato peeler (and goggles!) to remove skin and grate roots through food processor. Add vinegar for traditional sauce. Use quickly to avoid bitterness. Avoid aggressive growth, by harvesting outside edge roots.

We offer one of the largest sections of retail miniature hostas in the country. These beauties while small, can form impressive clumps, which are great for borders and at the front of beds. However, in our opinion, they are prettiest when they are divided often and kept in small clusters. Repeat these small clusters, just as you often see "impatiens" planted in large patches. Mini hostas are shallow rooted and will not tolerate dry soils as well as their larger cousins. Read on for more "Hosta Hints" Oh ya, did you know that the leaves and flowers are edible too! I've not heard of a legend connected to this hosta, but perhaps you could bring one to life for a child about 'Shiny Penny.' This is not for the Southwest.

Hosta, Tips for the South

For gardeners in the deep southern states, in November, cut back foliage to 1 inch. Dig up crowns. Pack the roots with peat moss & place in a plastic bag, leaving stems exposed. Place these in a refrigerator (fruit drawers are great) for 6-8 weeks. Replant as normal and enjoy

We've been building stock for years to make available this USA native miniature. We originally found this right here in Ohio. Two inch, delicate baby blue flowers brighten the shade (though it tolerates plenty of sun) in waves, that is, each blooming lasts about a month. If you deadhead, just sit back and wait for next wave. Sun or shade, cute as all get out - we can't grow enough of this perfect perennial.

Often posed among stones, this European native could be called "alyssum of the mountains." The clue to siting it in the rock garden is revealed in the species name alpina. Tiny cut-leaved foliage makes this a great Thriller "shrub" under any mini tree.

Blue flower spikes appear throughout the growing season. This miniature semi-evergreen shrub is extremely hardy and ideal for hedges and borders. It is easily clipped but be aware of bees- it's an important source of pollen for them. Overlook the bitter fragrance as it flavors heavy meats and liqueurs quite nicely, or so I have read.

Dijon-style Herbal Mustard

INGREDIENTS FOR A PINT JAR
(1 pound whole mustard seed results in 6 pint jars of prepared mustard)

3/4 c. MUSTARD SEED: whole, coarsely ground, powdered; yellow, brown or any combination

1/4 c. each LIQUID: 1/4 c. water, then 1/4 c. vinegar (sherry, wine or apple cider vinegar)
OR - 1/4 c. water, then 1/4 c. stout beer or liqueurs (for hot mustards)

1-2 T. FRESH HERBS: (tarragon, dill, chives or garlic OR
1-2 tsp. DRIED HERBS (thyme, savory, rosemary, oregano, or basil OR a dried blend)

2 tsp. to 4 T. SWEETENERS: jams, honey, brown sugar (light or dark), brown rice syrup

OTHER OPTIONS: jalapenos, chili oil, horseradish

FRESH THYME & GARLIC MUSTARD 3/4 c. fresh ground yellow OR yellow + brown mustard seeds 1/4 c. water 1/4 c. vinegar 2 tsp. honey *2 tsp. fresh thyme, minced **1 clove garlic, minced 1/4 tsp. salt 1-2 T. "Vermilion Valley Vineyard" Pinot Noir wine TASTE OF TUSCANY MUSTARD *substitute 1 tsp. dried Italian Seasonings **omit fresh garlic

Grind mustard. Add water. Set timer for 10-15 minutes. During this time you can mince fresh herbs and garlic and prepare a label and apply it to a pint jar. On label, mention ingredients, starting date (= 1 month after preparing), expiration date (=3 months for fresh herbs or 12 months for dried) and uses, along with the title and your name. When the timer buzzes, add vinegar, honey, herbs, garlic and salt. Stir. Add wine to achieve the consistency that you desire.

Pour into clean, labelled jars. Fill to about 1/2" of the rim. Screw on lid. Age for 4 weeks in a cool, dark basement OR a dark pantry.

Once opened, refrigerate.
